Caraïbe is a very well-balanced chocolate, with a seductive roundness and smoothness. Because of its beautiful balance, it remains my favourite. It's my Proust's madeleine, the first one I tasted! Of course, I've tried other excellent ones, but I'm still attached to this one. With its lovely balance, Caraïbe develops round, chocolatey notes of roasted dried fruit, ending on a slightly woody aroma. Its more accessible profile than Guanaja is unanimously appreciated and it is the children's favourite.
